Yogurt is commonly made by maturing milk from dairy animals. It is a rich source of folic acid, riboflavin, Vitamin B-complex and lactic acid microbes. It is used in the diet every day. It is rich in probiotics or great microbes which improves the well-being of the intestines. It inhibits the growth of coli and other terrible microbes.
• Anturi Pitha
It is a native of the state of Odisha. It is prepared during Kalaashtami festival with black gram and boiled rice. The two ingredients are put together on a ground that is fermented. The batter is then spread on a turmeric leaf and steamed. This food is easy to digest and can be eaten by people of any age group.
• Gundruk
It is traditionally found in Nepal. This dish is usually eaten in the north-eastern states – Arunachal Pradesh, Assam and Meghalaya. Gundruk is made from leafy vegetables such as mustard leaves, cauliflower, and radish leaves and is used as a side dish. The farmers allow the green leaves to dissolve for a day or two and then soakthem in some water, squeeze them and finally pack them in jars for a few days. When properly fermented the leaves are taken out and dried in the sun and used. This process makes the leaves rich in microorganisms as well as potassium, calcium, and sodium.
• Dhokla
A traditional fermented food, Dhokla is the staple food item of Gujarat. It is prepared using Bengal gram or rice. Rice and lentil flour are fermented with curd. As a result it is airy and spongy. The fermentation process enhances the antioxidant properties making it easily digestible and is also suitable for diabetes. It helps in dealing with age related diseases and diabetes.
